Definitely add Lydons Lodge to your list! Great beers, outstanding food (BEST banoffee pie!), wonderful staff, and incredible local music. Call ahead for a table and kick back to enjoy a great night.

Food was excellent. Really delicious. Excellent service. Apparently many of the folks who work at Ashford Castle (nearby and worth a visit) come here. We meet a number of them.
